Hi everyone, this is week 2 of my mindful Chef subscription, I get 5 meals for 1 person, but they are enough for two meals most of the time. I really love this subscription box and I wished I would have found it sooner!
Meal 1 Ingredients
- 1tsp balsamic vinegar
- 1 butternut squash
- 1 can chopped tomatoes
- 1tsp cumin seeds
- 2 garlic cloves
- 1 can lentils
- 120g chestnut mushrooms
- 2 tbsp tomato paste
- 1 bunch thyme
Meal 2 Ingredients
- 2 carrots
- 1red chilli
- 1 piece of ginger
- 1 lime
- 1 tbsp maple syrup
- 1bunch of mint
- 100g brown rice noodles
- 1 red onion
- 2tbsp sesame oil
- 2tsp white sesame seeds
- 200g tempeh (I add the picture later)
- 2 tbsp tamari
Meal 3 Ingredients
- 2 carrots
- Chinese five spice
- ginger
- 1 little gem lettuce
- 1 lime
- 30g deep roast peanut butter
- 1 red pepper
- 80g brown rice
- 300g tofu
- 2 tbsp tamari
Meal 4 Ingredients
- 1 avocado
- vinegar
- buckwheat flower
- cumin
- garlic
- ground flaxseeds
- 1 can beluga lentils
- 4 portobello mushrooms
- 4 spring onions
- 2 tsp pumpkin seeds
- 40g rocket
- 2 tsp rose harissa paste
- sweet potato
Meal 5 Ingredients
- cauliflower
- cannellini beans
- 20g hazelnuts( I gave it to my flatmate because I am allergic)
- 20g capers
- 1 lemon
- 30g olives
- 1 handful parsley
- 200g passata
- 80g baby spinach
- tomato paste
40g sun-dried tomatoes
