Hello my people, hope we all are doing great? Today i will be teaching us how to prepare Bitter leaf soup (which is know as Ofe Onugbu)

Description
Bitter leaf soup is one of the best soup in nigeria. Is a traditional soup in Eastern part of Nigeria.This bitter leaf soup recipe is generously stocked with flavoursome meats, fish and cocoyams. Make it when you’re in the mood for something warm, serve with your favourite swallow, tuck in and enjoy.

INGREDIENTS:
Washed bitter leaf
Cocoyams
Assorted meats
Smoked or dry fish

Stock fish

Stock fish
Ground dry pepper, to taste
Ogiri (locust beans)
Ground crayfish
Palm oil
Seasoning/salt to taste

METHOD:
Peel, wash and boil the cocoyam till tender, then blend or pound in a mortar.
Soak the stock fish in hot water to soften.
Season and boil the assorted meat until tender then add the stock fish and dry fish and allow boiling for 10 minutes.

Add the palm oil, ogiri, dry pepper, ground crayfish and cook for 3 minutes.

Add the cocoyam paste and stir very well. (you can add more water if it’s too thick), allow cooking for 5 minutes.

Add the bitter leaf, seasoning and salt to taste. Allow simmering for 5 minutes.

Serve with swallow of choice.

Bitter leaf soup is well enjoyed with akpu (fufu) but I prefer garri ( grinded cassava tuber).

@sambee the soup looks so appetizing.The soup is well stock with the right chewables.
However,I don't like ogiri.We don't use it in our place shaa.

OMG! you really deserve some awards for preparing such a delicious meal, in my dialect we call it "minniri olugbo" it one of my name favorite soup, if it is prepared in a way that i like. i think this particular one will be a delicious. thank you for sharing the procedures here.

This is tempting, i love bitter leaf soup and its mostly prepared in my place Enugu state, mostly used in occassions

Hahaha. In my state is one of our cultural food. We eat it with akpu (fufu) with two hands. It also cook during any occasion.

Which state is that,anambra state i guess because they have similar way of cooking the soup

Great job dear @sambee. That is nice. This bitter leaf soup and the method of preparation is mostly peculiar to the Anambra state in Nigeria. Most times they don't use red oil, they yes Palm fruits. Thank you for taking me on an adventure and reminding me of my days in Anambra State. The bitter leaf we first of all dry it before washing it that way, it won't break but stay in strips. Oh yes @ngoenyi, each state has their own method of cooking it. The best way is to keep the bittle leaf for sometime on the sun before washing.
