1-1/2 tsp. dried thyme or 1-1/2 tbsp. chopped fresh thyme
Celery seeds, 2 teaspoons
nutmeg, grated, in a pinch
small amount of ground cloves
kosher salt, 1 teaspoon
Stale or lightly toasted 1-lb loaf of high-quality white bread, cut into 1/2-inch cubes (10 to 12 cups).
freshly ground black pepper, half a teaspoon
milk, dry white wine, or 1/2 cup homemade or low-salt chicken broth
As required, use homemade or low-salt chicken broth or turkey stock.
