Like the little black dress of soups, silky tomato soup. It's a cosy lunch, served plain with a grilled cheese sandwich. When dressed up with straightforward garnishes, it makes a chic beginning to a dinner party.
Ingredients :
2 tablespoons of virgin olive oil
Unsalted butter, 1 tablespoon
1 large, finely chopped white onion
1 large clove of peeled and crushed garlic
2 teaspoons of all-purpose flour
three cups of reduced-salt chicken broth
Whole, peeled, 28-ounce can of puréed plum tomatoes (include the juice)
125/250 ml sugar
1 fresh thyme sprig
freshly ground black pepper and Kosher salt
3 tablespoons of fresh, thinly sliced basil, chives, dill, or a combination of all three (omit if using one of the garnishes below)

Heat the oil and butter over medium-low heat until the butter melts in a 5- to 6-quart nonreactive Dutch oven. Approximately 8 minutes later, add the onion and garlic and cook, stirring occasionally, until soft but not browned. To coat the onion and garlic, add the flour and stir. Add 1/4 tsp. of each salt and pepper along with the broth, tomatoes, sugar, and thyme. Stirring the mixture to prevent the flour from sticking to the bottom of the pan, bring to a simmer over medium-high heat.
