Combine 1 cup cooked rajma, 1/2 cup cooked chickpeas, and chicken cubes in a bowl.
Add 1/3 cup each of diced tomatoes, diced spring onions, and diced capsicum.
Add 1 tbsp diced dates and 1/3 cup sliced pineapple for a sweet and savoury touch.
To make the dressing, combine 1 tablespoon of lemon juice, 2 tablespoons of fresh chopped cilantro, 1 tablespoon of orange juice, 1 tablespoon of chopped jalapeno peppers, 1 tablespoon of olive oil, and salt and pepper to taste in a bowl.
After adding the dressing, thoroughly toss the salad. Offer cold.
