sliced Tillamook sharp cheddar
sliced, creamy havarti cheese
sliced monterey jack cheese

You should use an oven to cook your grilled cheese (this is how we do it at the restaurant, though you can also use a panini press or griddle). For the best results, set your oven to 500 degrees F and make sure your cooking surface (a sheet pan or tray) is inside the oven so it is hot when you place the "raw" assembled sandwich on it.
Set the oven to 500 degrees Fahrenheit.Each piece of sourdough bread should have a thin coating of salted butter on the outside. On the interior of the sourdough bread, spread a single layer of cheddar. Make sure to completely enclose the bread. Top with a single layer of havarti.

A single layer of Monterey jack should be placed on top of the havarti, making sure to completely encircle it. To finish the sandwich, place the other piece of buttered bread (butter side out) on top of the Monterey jack.
Place the sandwich carefully on the hot sheet pan or tray. Put the tray or sheet pan in the preheated oven. Cook the top slice of bread for 45 to 60 seconds, or until it turns golden brown.
Remove the sandwiched sheet pan.
