Red-White Porridge is not completely red. This porridge is made from rice, coconut milk, and brown sugar. This name comes from the word "red" for the name of brown sugar. For Indonesians, we call brown sugar as "red sugar" even though the color is not really red.

Since this porridge uses brown sugar which we call "red sugar" as the main sweetener, we named it Red-White Porridge.
Meanwhile, the white part comes from rice and coconut milk.
So the taste of this porridge is sweet and savory because it is a combination of brown sugar and coconut milk.
As a Symbol of Blessing and Gratitude
Red-White Porridge is served on major holidays, especially Indonesia's Independence Day (17 August 2020).
This is a symbol of gratitude and blessings for grace from God. Besides that, it is a symbol of gratitude after obtaining healing or obtaining major achievements in life.
Red-White Porridge Recipe
The two colors of this porridge don't mean it's made the hard way. In fact, it can be made at once. It only takes a technique to separate the main ingredients and then give them a natural color from brown sugar.
Let's start with how to make a Red-White Porridge.
This recipe is for servings of more than 4 people so it's perfect for serving families, especially on weekends or when gathering on cool evenings.
Ingredients
- 500 grams of rice, soak 3-5 hours
- 1000 ml of water.
- 1500 ml coconut milk/1.5 L coconut milk
- 200 grams of brown sugar, melted with 150 ml of water.
- 5 tablespoons of sugar
- 2 tablespoons of salt
- 2 teaspoons Vanilla essence or vanilla powder
- Pandan leaves (optional)
How to make
- Step 1
After the rice has soaked for three 3 hours, wash it clean again. Then, cook the rice with 1000 ml of water, salt, and pandan leaves for 30 minutes or until the rice is soft. Stir it occasionally so the rice doesn't burn.
- Step 2
Add 1500 ml of coconut milk and vanilla. Stir occasionally and cook for another 30 minutes.
- Step 3
When the rice is cooked to porridge, remove half of the portion.
Set aside half of the portion to another container.
- Step 4
Then add the liquid brown sugar that has been previously melted. Don't forget to strain the liquid brown sugar first before adding it to the porridge.
Stir well for a while then remove.
- Step 5
Red-White Porridge is ready to serve. Arrange the brown sugar porridge first on a serving plate, then add the white pulp to the red porridge.
