When I ’m bored with Indian food, I make some Chinese for my family. Noodles are usually bland and this recipe using all Spices makes it taste delicious. It’s a wholesome dish with prawn as well as veggies. It is so easy to prepare and also tastes good. You can even use whole wheat noodles to make it healthier. Pop in the prawns and stir-fry for a couple of mins until they have just turned pink.

Ingredients

- Use the packet noodles:-
- 3cakes Maida noodles
- 1 cup finely chopped spring onion bulbs
- 1 cup thinly sliced cabbage
- 1 cup thinly sliced carrots
- 1 cup thinly sliced red capsicum
- 1 cup thinly sliced green capsicum
- 1 cup thinly sliced yellow capsicum
- 4 green chillies vertically split
- 1 tbsp red chilli powder
- to taste Salt for veggies
- to taste Salt for noodles
- as needed Water for boiling noodles
- as needed Oil for sauteeing veggies
- 1 tbsp soy sauce
- 1/2 tsp vinegar (optional)
- 2 tbsp ketchup
- 1.5 tbsp green chilli sauce
- For the prawns:-
- 750 gm prawns
- 2 tbsp butter
- to taste Salt
- 1/2 tsp pepper powder
- For the scrambled egg:-
- 2 eggs
- to taste Salt
- 1 tbsp milk
- 1 tsp oil
- 1/2 tsp Turmeric powder
- For garnishing
- as needed Finely chopped spring onion greens.
Steps
- Boil noodles until al dente (firm to the bite). Doesn’t overcook as it become mushy. Cool completely.
- Scramble the eggs and set aside on a plate.
- Clean and de-vein prawns. To a nonstick pan melt the butter.Fry the prawns with butter in low flame till pink in clour.
Add prawns and cook till the water runs clear. Add the salt. Fry on low flame until it gets crisp. Don’t overcook or it becomes chewy.
- In another larger pan add all the veggies and sautée them until crisp. Don’t make it mushy. Add salt to taste.
- In the same pan add the soya sauce, vinegar (optional), green chilli sauce, ketchup. Mix well.
- To the same pan add the cooked noodles, fried prawns and egg scramble. Add chilli powder and salt for the noodles according to taste. Toss well until sauces are evenly coated on the noodles.
- Garnish with spring onion greens. Serve hot noodles with tomato ketchup.
