Homemade French Onion Soup From Today

Did some home cooking today. Made some soup! We have allot of onions right now, we also have plenty of chives coming in the garden. Went ahead to make an onion soup! Made a special broth and cooked up the onions over a long period.

The house smelled good throughout the day. By evening it was blended all together. I got some cognac for flavor from the store. The soup ended up being very good. I felt great after eating it! We had it with Black Russian Bread with some various cheeses. Some white cheddar, yellow cheddar and some muenster. I know to add the bread and cheese to the soup too. I will try that next time.

I like it when we make food at home. Glad we can afford a fair amount of groceries. Tomorrow I will make another spaghetti. We have sauce and pasta so might as well. This soup was nice 'cause I have not had it for awhile and can finally get something from the garden already with the chives. I'm glad for our garden! We have so many animals in the yard now. I do enjoy that allot. When we first moved here there weren't any. Look forward to getting as much food as I can from the garden this year. Food always feels better and right when it's made at home and especially when you grow some or all ingredients yourself.

The yellowish stuff on top is nutritional yeast I added in. The taste of the soup is almost bitter when you first start then it quickly gets really good as you get used to the taste. Even though its onion soup it was filling enough!

we used 4 to 5 onions 4 tablespoons butter, cook on lowest heat for 2 hours or until onions caramelized. Once onions are brown but not burnt add half cup wine, half cup cognac and 2 quarts stock. we served ours with nutritional yeast. serve with assortment of cheeses with toast or croutons .

Cook for 2 hours?
