Today I come with great enthusiasm to share some of my favorite salads, easy and quick to make, the best thing is that it is 100% vegetarian and rich in proteins and vitamins. Join me to learn how to do it step by step, but first, let's talk about the ingredients and their benefits:
INGREDIENTS:
- 3-4 eggplants: It is rich in minerals such as potassium, calcium, magnesium, iron and phosphorus, which helps prevent arthritis, osteoporosis and heart disease.
- 1/2 peppers: Its high iron content makes paprika help prevent iron deficiency anemia or anemia due to lack of iron.
- 1 whole onion: Due to its sulfur components it prevents platelet aggregation and thrombus formation, as well as high cholesterol and triglycerides.
- 1 whole carrot: Strengthens teeth and gums also Fight constipation and stomach pain.
- 1/2 purple onion: Improves gastrointestinal health and controls glucose levels.
HOW TO PREPARE
In my case I got eggplants in my garden as I show you here:
- We take all the vegetables that we will use and wash them
- Then we cut the vegetables into julienne
- Then we add the vegetables to the pan in the following order: aubergine together with the carrot, after half a minute add the onion and red onion, finally the pepper
Then we will stir gently until golden brown
Add a little pepper and salt to taste and remove for 5 more minutes low flame until it settles
Put it on a plate and enjoy your delicious salad rich in protein and vitamins, also with an incredible flavor (trust me).
