How to prepare Afang Soup by ...

Good day fellow steemians, Today, I prepared one of the favorite soup where I am living in Akwa Ibom State of Nigeria. The soup is called Afang soup. This name is derived specifically from one of the vegetables used in preparing this delicious soup. Afang leaf botanical name is Gnetum Africanum. It belongs to the family of Gnetaceae.

This is served with garri(eba) and can be eaten alone by vegetarians. The health benefits of this leaf are many, but will, just mention a few.

It can be used for treatment of enlarged spleens, nausea and sore throats.
It eases constipation and helps to control blood sugar level.
These benefits are attributed to it being rich in antioxidants, vitamins and mineral content.
Now the recipe for cooking this soup are as follows,

Afang leaf
Waterleaf
Red oil
Pepper
Onions
Meat
Ginger
Garlic
Tumeric
Salt
Roasted fish
Shelled periwinkle

We can get the Ingredients from the market, buy the Afang leaf and the waterleaf from the market and cut the leafs.

Wash the periwinkle very well and put it into the pot that will be used to cook the soup. Also wash the meat, roasted fish and put them together in the pot. Mash some pepper, garlic, tumeric, ginger in a mortar, add the mashed items to the soup pot. Add a medium-size onion too and add little water to steam the ingredients till tender.

After the meat is softened, you add the Waterleaf and cover the pot, this is to allow the water from the waterleaf come out and get done by itself. After the water is out, stir everything in the pot together. Leave it to boil for 5mins,

Then add the Afang leaf and stir to mix together.

Then add red oil to the soup and stir, leave to boil for about 3mins.

Wow, our delicious Afang soup is ready to be enjoyed.

Next is to make the garri or Eba to used in eating the Afang soup.

Boil some water in a kettle, allow it to boil 100°c, then pour a certain quantity of water in a bowl, put some quantity of garri you can finish in the bowl of hot water, then turn the eba , and it is ready to be eaten.
