Ekpang nkukwo is a very delicious meal that is eaten and valued by the people living in Akwa Ibom state. It is one of my favourite meal, I love eating Ekpang nkukwo, it was one of my cravings during pregnancy and also one of the main dish during my omugwo.
It involves many processes, but the outcome is always mind blowing. I will be sharing steps to prepare Ekpang nkukwo.
But before then, these are the ingredients used in preparing this delicacy.
- Wateryam
cocoyam
cocoyam leaf (nkukwo)
fish and crayfish
cowskin meat
periwinkle
oil
Maggi
Pepper
Scent leaf and curry leaf
STEPS IN PREPARING EKPANG NKUKWO
STEP 1: Peel of your cocoyam and water yam, wash it thoroughly to remove all the dirt and sands, keep it to dry.
STEP 2: Grate the cocoyam and water yam together using a grater, when it is grated, add two seasoning cubes and mashed it to mix properly.
- STEP 3: Sliced the cocoyam leaf using your hand, slice it big so that it will be used to wrap up the grated cocoyam and water yam comfortably.
- STEP 4: After slicing it, put it in a cold water or lukewarm water, add salt and allow it to soak for 30minutes, this is done to prevent it from itching while eating it.
STEP 5: Prepare all ingredients that will be used and keep it aside.
STEP 6: The next step is the wrapping stage, pour oil into the cooking pot, wrap up the cocoyam and water yam with the nkukwo (cocoyam leaf) into that pot, Wrap it up to the size preferable for you.
- STEP 7: After wrapping everything, you now add the ingredients to it while it's still on the floor.( Fish, Crayfish, periwinkle, Maggi, Pepper and salt).
- STEP 8: Boil water to the boiling point,then pour the hot water into the wrapped Ekpang and place it on fire, cover it to boil for 30 minutes or more.
- STEP 9: When it is done, use a kitchen knife and cut them into smaller pieces, cut it properly while it is still on fire, then stir it properly, cover it for few minutes.
- STEP 10: When it is properly cooked, and the cowskin meat and mixed it well, later add the curry and scent leaf, stir it up and bring it down.
Your Ekpang nkukwo is ready to be served.

At first glance it looks like porridge, but it's not. In my place, sweet potatoes are used to make porridge, but coconut milk or grated coconut is added if eaten after being boiled.
I wonder how it tastes.... This is something new to me? Is it like chicken curry sauce?
