I hope everyone is well; today, I want to share one of the most cherished culinary treasures of the Ibibio people with you; most of you already know that I'm from Akwa Ibom State of Nigeria, and Ibibio is my tribe. Yes, we don't take last when it comes to culinary skills; this food is none other than Ekpang Nkuwuo. Ekpang nkukwu is rich both in culture and flavor and is not only a delight for our taste buds but also a symbol of heritage, especially among we Ibibio and Efik people.
The origin of Ekpang nkukwu starts from the art of using our local tubers like cocoyam and water yam, which are staples in Akwa Ibom and Cross Rivers State, to create a special delicious, unique dish. This dish has been for centuries now and has become a favorite meal that resonates deeply with our history and traditions.
Occasions for Enjoying Ekpang Nkuwuo:
Ekpang Nkuwuo is a dish we often reserve for special occasions. We usually prepare it for family gatherings, traditional marriages, weddings, and other traditional ceremonies to reflect its importance in social and cultural functions. But I often prepare it at home because it's one of my favorites. Also, people used to serve Ekpang nkukwu on celebrations that mark significant life events like births and naming ceremonies. The truth is that we just love it because it's a richly flavored meal
Most Importantly, new mothers are specifically encouraged to eat Ekpang Nkuwuo, as we believe that it enhances their recovery, helps restore their energies, and boosts their overall postpartum health. Ekpang nkukwu is imbued with meanings of care, unity, wellness, and community, as families, neighbors, and friends usually come together to share meals during these remarkable events.
Health Benefits of Ekpang Nkuwuo:
Ekpang Nkuwuo is not only our culinary delight and heritage but it's also a source of numerous health benefits. Cocoyam is packed with Fiber, vitamins, and minerals. It is high in vitamin C content, which supports our immune system. The fiber in it aids digestion and promotes a healthy gut.
The dish contains numerous proteins; due to how we prepare it, we normally combine it with fish, meat, and crayfish. These ingredients make it a great source of nourishment for all, especially nursing mothers, who need additional nutrients to support their health and lactation. Eating Ekpang nkukwu strengthens women in their recovery journey giving vital nutrients to newborns through breast milk.
Preparing Ekpang Nkuwuo:
How we prepare Ekpang nkukwu is a passed-down skill from generation to generation. Here’s a straightforward process for making this delightful dish:
Ingredients:
- Cocoyam, water yam
- Palm oil, and curry leaves in
- Fish and cow skin
- Ground crayfish, periwinkles
- Seasoning cubes
- Salt, cocoyam sprouts
- Water

Step 1Preparing the Cocoyam: Begin by peeling and grating your cocoyam and water yam into a large bowl or tray. Mixed them thoroughly with salt, and seasoning cubes to achieve a well blended texture.
Step 2 Cut the cocoyam leaves into desired sizes, add a pinch of salt and hot water, and sift the water out.
Step 3 Layering in the Pot: Put oil in the bottom of your pot and use the cocoyam sprouts to wrap 🌯 the cocoyam mixture and place them in layers on the pot.

Step 4 Adding Hot Water: Boil and pour a small amount of hot water into the pot and cover it. The steam will cook the cocoyam and leaves, giving the dish its unique flavor.
Step 5 Cooking: pound your crayfish and add to the pot; wash your fish and add too, add seasoning cubes and salt to taste, and allow the pot to cook on low to medium heat for about 30-40 minutes. Check occasionally to ensure it does not dry out or burnt to adjust seasoning as necessary.*
Step 6 Cutting: Once cooked, I use a knife to cut the Ekpang nkukwu to my desired sizes. I add periwinkles and cooked cow skin, and finally, I slice my curry leaves and put and turn, My delicious Ekpang nkukwu was ready, and I served it hot and enjoyed it as a main meal.
In conclusion, Ekpang Nkuwuo is our traditional delight. It stands as a testament to the richness of our cultural heritage. This dish, laden with significant health benefits and delectable flavors, continues to bring families together; it fosters love and community.
