HeLLO friend, gracious greetings from your humble friend @josepha. Indeed, I am so excited to have you here, my dear friend. I am sincerely grateful to @klen.civil for organizing the contest, in which you are about to read my entry. I have discussed the food that I cooked today in this post.


Introduction

Nigeria My dear friend, beans and plantain porridge are the foods that I cooked today. Beans and plantain porridge is one of the delicious meals in Nigeria that is made up of rope plantains and beans.

Beans and plantain porridge is a very tasty dish that is very popular in the whole world besides Nigeria because of how delicious and proteinous it is. In Nigeria, a lot of parents are dragging their children to eat beans rather than rice. This is because beans contain a lot of proteins and, in addition, eating them with ripe plantains makes one feel better because ripe plantains add more sweetness to the taste, which makes me love eating so much.


Ingredients

250 gr. beans ( black or brown-eyed beans)

5 ripe plantains(peeled and cut into chunks)

2 onion bulbs (sliced)

Crayfish

Fresh Tomatoes

Fresh Pepper

Salt to taste


Cooking Instructions



Step1: The first thing you should do is to soak the beans in cold water for about 3 hours, or overnight. After rinsing the beans and straining them in a colander or strainer, discard the water.

Advice: Omit the soaking step and cook the beans with 1/3 teaspoon salt to make them soft.

Step2: Plantains should be peeled, chopped into slices, and set aside after cutting. (Peel the plantain and chop it).

Step3: Grind the crayfish. Chop the peppers and onions, then set them aside.

Step4: Put the strained beans in a pot or pressure cooker. Add water into the beans. Allow it to simmer until fork-tender but not overly soft. If more water is needed, do so carefully to prevent creating a watery mixture. Porridge

Step5: The onions and skinned plantains should now be added to the pot. Cook the plantains until they are soft.

Step6: Crayfish, stock cubes, palm oil, salt, and pepper to taste should all be added. Mix thoroughly and leave to simmer for 8 to 10 minutes on a low heat. It's time for your bean and plantain porridge.

You can eat it plain, with tomato stew on top, or just with bread and garri.
