Few days ago I decided to prepare a quick African dish. We call it okro soup in English and etike in Ibibio( my native dialect). I almost forgot to share with my fellow steemians and I wouldn't let today pass again without doing so.

So first let's talk about what motivated this particular food. I was very tired after a long day. I sat on my kitchen stool thinking and racking my brain around what to hurriedly prepare and eat. I was so hungry and so were my other members of the family.

I scanned through my kitchen and boom I caught sight of my fresh okro Fruit I bought from the market days ago. Other ingredients were in sight too, I was already sure of my meal to be ready in the next 10 to 15 minutes.

Dear steemians follow along as I take you guys through on how I prepared my delicious okro soup.

So first I got my ingredients ready, I'll list my ingredients and how much I got them with their equivalent in steem.

My ingredients:

  • Okro Fruit - #500 = 1.9steem

  • Vegetable leave (I didn't buy this one, I have a garden in my house where I grow vegetable leaves)
  • Goat meat - #3000 = 11.4 steem
  • Fish - #1500 = 5.7 steem
  • Maggi - #500 = 1.9 steem
  • Salt - #300 = 1.1 steem
  • Crayfish - #1000 = 3.8 steem
  • Fresh Pepper - #500 = 1.9 steem
  • Red palm oil - #1000 = 3.8 steem

Well, you'al don't expect too many ingredients, this meal was a little unplanned and the ingredients I have at hand is just enough for me to come up with my delicious meal.

Steps to achieve my meal:

  • Season the meat protein in a pot and allow it to steam properly.
  • Add your fish to the pot, increase the water and steam properly. If you have periwinkle, add to your pot and allow it to cook.
  • Add your well grinded pepper with crayfish
  • Taste and add your seasonings (maggi and salt) to your taste.
  • Add water to your soup judiciously and add your red palm oil ( for learning purpose, your oil comes before your okro to maintain the thickness of okro)
  • Introduce your well sliced okro and allow it cook for a while

My meal still cooking on fire

  • Add your sliced vegetable leaves and allow them to cook
  • After a few minutes your meal is ready to be served.

This soup can be served with different swallows. It can be garri, fufu, semovita and even pounded yam. Whichever swallow you choose to use with this meal, your mix and prepare it well enough so you will get all the intricacies this meal has to offer😀

For me, what sat well was the cassava flakes (garri). so mixed it well with hot water and if blended to well and hot.

I ate this food more than what I bargained for 😀 my other family members ate and enjoyed it so well.
