By the theme, I will share a recipe made from purple sweet potato, which is "Kolak Biji Salak". The Kolak Biji Salak dough is round like salak seeds. That's why we call it Kolak Biji Salak.
Besides being delicious, purple sweet potato has so many benefits for the body. It can be maintaining weight to lowering high blood pressure. This purple sweet potato has a sweet taste and a fragrant aroma.
Carbohydrates can not only obtain from rice, but also from sweet potatoes. Purple sweet potato contains fiber, antioxidants, minerals, and B vitamins that help control inflammation in the heart and blood vessels.
Consumption of purple sweet potatoes can also help prevent the risk of high blood pressure, arteriosclerosis, stroke, and other cardiovascular diseases.
Biologically, purple sweet potatoes and potatoes are still in the same family. Both are also rich in nutrients and fiber. However, purple sweet potatoes provide up to four times more vitamin intake than potatoes.

"Kolak Biji Salak"
INGREDIENT
- 400 grams of purple sweet potato
- 115 grams of tapioca flour
- 2 pandan leaves
- ½ tsp salt
Step 1: Making Biji Salak Dough
- Peel the sweet potato, wash it clean, cut into pieces, then steam until cooked
- Then puree the sweet potato while it's still warm
- Mix the mashed sweet potato with tapioca flour and salt until it can be formed into a round
- Divide into several parts, then round like marbles
- Boil the dough that has been in the form of marbles with water and pandan leaves until the water boils. The cooked dough is marked if the dough floats. Then drain
Step 2: Making Coconut Milk Sauce Ingredients
• 650 ml coconut milk
• 165 grams of sugar (according to taste)
• 5 bananas
• 1/2 tsp salt
• 2 pandan leaves (knot)
How to make :
- Prepare two coconuts, grate, then take the coconut milk
- Prepare bananas, then cut to the size as shown in the picture
- Boil coconut milk, water, sugar, pandan leaves, and salt until it boils
- Add bananas, stir until bananas wilt
- Turn off the heat, then add the boiled marble-shaped dough, stir, and ready to serve
Ready to serve
