What is the best option for a healthy lunch?

Nothing.

I’m moving countries during the pandemic and starting digital companies and publications. I’m writing around the clock and need my brain's optimal performance at all times. The thing that works well is fasting, so I eat nothing.

I’ve never been healthier, looked younger, or felt better.

My income skyrocketed, my bloodwork is stellar, and I have energy around the clock

Now, it’s not a superpower or anything spectacular, it’s just plain old fasting.

Humans have been fasting for thousands of years, and our bodies are adept better for a decent fast than 3 carb-fueled meals a day. If you’re over 40, you have a higher chance of dying from cancer, stroke, diabetes, or any heart condition than you have of dying in a car crash or an accident.

What you eat for lunch is essential for your health and longevity.

If you’re thinking about skipping a few meals, then I’d recommend adding MCT oil in the morning with your tea or coffee. MCT will help you deliver ketones and help with energy production during the switch in lifestyles. You’re feeling better and look younger, and that brings other benefits that are hard to measure, but life-changing.

Here’s a good brand if you’re in the US: https://www.peaknutritionshop.com/blog-posts/what-is-mct-oil

Then go crazy and eat whatever you’d like without any guilt, after fasting for 16–18 hours, or even a few days. Prepare chicken nuggets, avocado salad, or chicken tikka masala and enjoy the meal without thinking twice.

What should you eat for lunch that is simple and healthy?

Nothing.

How long have you been doing this? All the people I know that have tried fasting have given up after a period of time. I'm not saying you are wrong or criticizing your choices so don't get the wrong idea. There's more than one way to health and fitness and everyone is different. I'm just curious as to how long you have been doing this.
