牛肉丸有两种,一种是潮汕牛肉丸,另一种其他牛肉丸。
潮汕牛肉丸是用两根特制的铁棒,每根3斤重,面呈方形,用双手轮流捶打,直至把牛肉打成肉浆。
然后用牛肉、牛骨熬汤来煮牛肉丸,这样就保证在煮牛肉丸时,肉丸的肉味不会渗透到汤水中,从而使牛肉丸更具浓郁的牛肉味,最后用沙茶酱作酱碟吃
