When we talk about Venezuelan desserts, it is difficult not to think of a delicious golfeado. That soft sweet bread bathed in our renowned papelon or panela and with a lot of grated cheese on top, is simply glory. Many of us cannot ignore it; and its flavor and texture are an explosion of delight in our palates.
That is why Truchi Cafe did not want to be left behind and we began to make one of the products most requested by our customers; however, not all customers are the same and as we enter the bakery world, we discover different tastes that force us to make a variety of the same dessert.
This is where the popular bonbon is born, a sweet bread that, unlike golfeado, does not contain paper or cheese and has also become one of our customers' favorites. Today I want to tell you a little about both and for you to decide which of the two is preferred by your palate.
🍩The flour for the dough should preferably be of great strength (12-13% protein). It should not be forgotten that this flour is used in breads that require the highest amount of sugar and fat.
🍩Placing spices (sweet anise seeds) is essential for this dough.
🍩Adding yellow food coloring (in a small quantity) generates a quite striking visual effect.
🍩Adding the butter little by little while it is kneading can make the difference between a difficult dough to knead and a more manageable one.
🍩The touch of vanilla is always necessary when you want a special smell and taste.
🍩The butter should be at room temperature.
🍩This must be done at least one day in advance so that it becomes thicker and therefore has a better flavor and texture.
🍩Usually, when you melt or cook the papelón, you add a few cinnamon sticks.
🍩A good sweet should always have a pinch of salt; this is no exception, so add a little salt (whatever you can grasp with your thumb and forefinger).
During baking, after approximately 15 or 20 minutes in the oven, the tray should be removed and the rolls should be placed with some of the papelón syrup and returned to the oven for about 5 minutes or until they turn golden brown.
