Cassava botanically called manihot esculenta, is divided into two which are sweet cassava manihot palmata and bitter cassava manihot utilissima
Bitter and sweet cassava are normally distinguished using the rate of hydrocyanic acid (HCN) contained in their roots.
But the major difference between sweet cassava and bitter cassava is that sweet cassava contains less than 100 mg kg-1 of cyanogenic compounds per fresh root, where as bitter cassava contains more than 100 mg cyanogenic compounds per root.
Cassava is one of the major food produced in Nigeria.
It's can be changed into different products which will be explained in the next heading.
When talking about the end products of cassava root, We start thinking about all kinds of food made from cassava, which include animal feed and industrial products that is gotten from cassava which include like garri, cassava flour, cassava starch, cassava chips, and many more.

Cassava is a very calorie-rich vegetable with carbohydrates as it major Content, it also contains vitamin C, thiamine, riboflavin, and niacin. The leaves of a cassava plant contains 25% protein also.
