My Sunday Food Diary: The Making of Jollof Rice (West African Delicacy) | 10% Payout to @steemalive

Introduction

It's a blessed new day, Sunday, a day of the week to worship God with other congregations in my church. As my usual practice, I stepped out of the house at a few minutes to 8:00 am to attend the Sunday service at my Church. The first service was a great one, likewise, the Sunday school service. At 10:30 am, all services I attended finished and I headed home and about 11:00 am, I felt I should make my breakfast for the day.

Jollof Rice

For Sunday breakfast, I chose to prepare Jollof rice all by myself, this is a popular delicacy in the Western part of Africa, talk of Nigeria, Ghana, Benin, and so on. Mostly, if rice is to be used for special occasions, it is prepared this way and it is more valuable as compared to using other forms of rice delicacy for the event. Today, I will walk you through how I made homemade Jollof Rice.

Ingredients

Materials Quantity
Long Grain Rice 300g
Green Pea 115g
Sweet Corn 115g
Carrot 130g
Seasonings 2 cubes
Salt, Curry, Thyme Added to taste
Fresh Pepper, Tomatoes, Onions Adequate Mixture
Tomato Paste 65g
Vegetable Oil About 75g
Meat As desired, I used Beef
Now that we have listed the ingredients above, let's take a look at the pictures of them all in the set of pictures below.

In the last pictures shared above, I have just blended the pepper, tomatoes... mixture and the required quantity for the delicacy has been poured into the plate (note that: the quantity is just about 1/4 of the total blended pepper, tomatoes and onions mixture). Let's go into the preparation proper.

Preparation

  • Pour the vegetable oil into the pot, allow it to be hot, and add the blended pepper mixture. In addition, the processed tomato paste is added.
  • I added salt to taste. Add the seasoning cubes, curry, and thyme.
  • Allow the mixture to be fried for about 10mins on medium cooking heat. After that, I added water into the pot of the mixture being fried and allowed it to boil, this takes about another 15mins.
  • Now, I poured the washed rice into the boiling water and ensured that the water level is just around the rice level inside the pot.
  • Allow it to cook for 20mins then add the green pea, sweet corn, and carrot.

  • Stir the newly added ingredients to mix with the content of the pot and allow it to cook for another 10mins.

  • The Jollof rice is ready, served on a plate with the beef on the top. The meat could have been the one that has been cooked in a stew, it also goes well but in this case, I chose to use it directly as fried.

    Conclusion

    It's always a great pleasure for me to cook my meals at home, and to be frank, I hardly use the restaurant for my meals, it's seldomly done if I have to. The delicacy shared in the piece can be enjoyed with chicken or any other meat of choice, fish, and so on, in addition, fried plantain can also be combined to fill the top of the rice.
