Hello everyone,how're we doing today? It's my pleasure as always to participate in the current @steemalive a meal a day contest. I'm going to be making a local soup which we have all eaten at one point or the other and it's very easy to make as I noticed in the comment section of this contest that some people said they didn't know how to cook and are willing to learn.
Today I'm making Okro Soup. Yes draw soup. Though there are two major draw soups which is ogbono and okro,my focus for today is okro. Let's get right to it.
Ingredients For Okro Soup
For today's meal I'm cooking for 6 persons and it's a one night meal,so the quantity of ingredients I'm using isn't much.
- Okro - grated or sliced
- Red Oil
- Uziza leaf
- Ugu (Pumpkin Leaf)
- Knorr seasoning -2 cubes
- Salt - A pinch
- Protein - (Chicken used)
- Crayfish (ground)
- Fresh Pepper ( ground)
- Water - As desired.
How To Cook
- Put your desired quantity of oil in a pot which is already on fire,let it heat a little,add your already ground crayfish and stir. Let it simmer for 1 minute then add the already sliced or grated okro.
Stir until it thoroughly mixes ,add your desired quantity of water and allow to boil. As it boils you'll notice a foamy bubble,yes you're on track.
NOTE: DO NOT COVER THE POT!! I REPEAT DO NOT COVER THE POT OR THE OKRO WILL FALL FLAT!!!
As the okro boils,stir it so it doesn't burn. After boiling for 7minutes, I'll add my protein( I'm using chicken for this meal),knorr seasoning, salt to taste and pepper after which I stir and allow to boil for 4minutes so every ingredient put so far can blend together.
At this point my okro soup is almost ready,all that's left to add is my vegetables. As earlier stated I have uziza leaf which I'm using to spice the soup. I also have my ugu(pumpkin leaf)
After boiling for 4 minutes thereabout I add my uziza and ugu together and allow it boil for 2minutes.
My mother would always say that one shouldn't allow their vegetable boil for long.
With that in mind after 2 minutes the uziza and ugu have blended well in the soup,our delicious okro soup is ready and it's time to eat.

I enjoyed it. You made me salivate. I love okoro soup very much especially when prepared with very dried fish. Besides, you never get it wrong with okoro. It has great health benefits. Nice write up.

Wow! Okro soup is one of the soup I do enjoy especially with much pepper in it. It's always very enjoyable while it's still hot.
