So before I went to church this morning, I made this delicious jollof rice I want to share with you.
INGREDIENTS
- Rice
- Sachet tomatoes
- Eggs
- Seasoning cube
- Groundnut oil
- Pepper
- Onions
- Salt
- Onga spices
STEP BY STEP PREPARATION
step 1: Parboiling the rice.
I got my clean pot ready as I poured my rice into it, put a little amount of water to it, place it on the fire for parboiling. Few minutes after, I put off the fire, bring the pot down and drain out the first water. I then put another water into it, rinse it properly and put it aside.
step 2:
After I had kept the rice aside, I then place an empty pot on the fire again, allow it to dry off the water inside it, then pour the groundnut oil into the empty pot, and when the oil was hot enough, I put my already slice onions into the hot oil.
step 3:
Few minutes after, I turned my tomato paste into the pot, mixed it with the onions, then put my pounded pepper, seasoning cubes and my spices and allow it to cook properly for some minutes, tasted it to know if everything was even.
step 4:
And after that was done, I poured my rice into the already prepared sauce, put enough water that will make the rice cook properly and soft. About 40-45 minutes my jollof rice was ready and so was my boiled eggs to go with it. I didn't have enough time to eat at home, besides we don't really eat on Sunday morning, so I packed the food to church.
Believe me when I say it was yummy 😋.
