The origin of traditional talam ubi cakes
This Betawi traditional cake is often called kue talam ubi. This cake is also often seen in traditional market snacks. This cake uses cassava as its main ingredient. Not only cassava, many types of sweet potatoes can be used as ingredients to make this type of cake. Such as sweet potatoes, purple sweet potatoes and several other types of sweet potatoes. But this time our choice fell on cassava."

This cake has a soft texture and is also slightly sweet and savory. Because of its easy making process, it is very easy to make this talam cake. The cake consists of two layers with different flavors. The first layer is made of cassava and brown sugar for sweetness. And the second layer is made with a mixture of coconut milk and cornstarch and a little salt to create a savory taste.
Why we chose cassava. Because it happened that at the market this morning we found cassava at a cheap price. Seeing that my mom bought a few kilos to make cakes and half were also planning to make spicy cassava chips. No need to linger for a long time, here are the ingredients that will be used.

Ingredients
First Layer
- 650 gr grated cassava
- 200 ml coconut milk
- 3 tbsp sugar
- salt
- 1 tbsp tapioca flour
- 200 gr brown sugar
Second layer
- 350 ml coconut milk
- 7 spoons tapioca flour
- 2 tbsp rice flour
- salt
For the making process, we will first make the first layer. Grate the sweet potato until smooth. Here I use sweet potatoes that have been grated in the shop directly so there is no need to grate one at home.
Then mix 200 ml of coconut milk and brown sugar. After that, put it in a pan and heat it until the brown sugar and coconut milk are well mixed. After everything is mixed turn off the heat and wait for the coconut milk to cool. After cooling the coconut milk mixture then filtered until there are no lumps of brown sugar. After everything is filtered, then mix it into the grated cassava. Add sugar, salt and 1 tablespoon of tapioca flour.
For sugar and salt, adjust to your own taste. Because I don't really like sweet I only put 3 spoons of sugar. After everything is mixed, prepare a baking sheet and give a little cooking oil so that it doesn't stick later. After that, steam the dough for about 30 minutes.
While waiting we prepare the dough for the second layer. First prepare 350ml coconut milk, 7 tablespoons tapioca flour and 2 tablespoons rice flour. Gently combine the three and stir until combined. Once mixed add salt to taste.
After 30 minutes pour the second layer slowly. After that, wait to steam again and wait for about 25 minutes until the layer appears to harden. When finished turn off the stove and open the steamer lid, and wait for the cake to cool slightly before removing it from the steamer. After everything is done, the cake can be eaten immediately or put in the refrigerator first.
I usually serve the cake in the morning and eat it while drinking hot tea or coffee. This cake goes well with a variety of drinks because the flavor is not too strong. And there are sweet and savory flavors from this cake that make this cake itself suitable for dessert.
