What is the name of your best dish? Share steps in preparing it.
Plantains; its perfect for anyone looking for a satisfying meal that combines both flavor and nourishment. Plantain is a staple in many tropical regions, and the porridge prepared from it is loved for its earthy taste, versatility, and health benefits. If you’re ready to enjoy this comforting dish, here’s how to prepare it step-by-step.
Ingredients You’ll Need: -
- Unripe or semi-ripe plantains – 4 to 5 (peeled and cut into small pieces)
- Palm oil or vegetable oil – 3 tablespoons (palm oil gives a richer taste and color)
- Crayfish (optional but adds flavor)
- 2 tablespoons (blended) - Onions
- Fresh pepper or dry pepper – To taste (blended or chopped)
- Smoked fish or dried fish (optional but adds a smoky flavour
- Salt – to taste
- Seasoning cubes or powder – to taste
- Water – 4 to 5 cups (for cooking)
Step-by-Step Preparation:
Peel and Cut the Plantains: Start by peeling the plantains. Use a knife to make a shallow cut lengthwise along the ridges of the plantain and then peel off the skin.
After peeling, cut the plantains into small cubes or discs. The size of the pieces depends on your preference, but smaller pieces cook faster and absorb the flavors better.
Boil the Plantains: In a medium-sized pot, add the cut plantains and pour in enough water to cover them. You can add about 4 to 5 cups of water, depending on the amount of plantain you’re cooking. Let the plantains cook on medium heat for about 10 to 15 minutes until they begin to soften.
Prepare the Base with Oil and Vegetables :While the plantains are boiling, heat the palm oil (or vegetable oil if you prefer) in another pan.
Add the chopped onions and garlic to the heated oil and sauté until they become translucent and fragrant. This should take about 3 minutes. Add your blended or chopped pepper and stir for another 2 minutes.
Add Crayfish and Fish
Next, add the blended crayfish and stir them into the mixture, letting it cook for about 1 minute to release its flavors. If you are using smoked or dried fish, add it at this point, ensuring it is properly deboned. Let everything cook together for an additional 2 to 3 minutes.
Mix the Sauce into the Plantains :Once your plantains have softened, reduce the heat to low and carefully pour the oil mixture (with onions, pepper, and crayfish) into the boiling pot of plantains. Stir gently to combine all the ingredients, ensuring that the plantain is evenly coated with the mixture.
Season and Simmer Add your seasoning cubes or powder and salt to taste. Stir everything again to make sure the seasoning is evenly distributed. Let the porridge simmer for another 10 minutes, allowing the plantains to soak up the flavors.
Serve and Enjoy:Once the plantain porridge has thickened to your desired consistency and the greens have been cooked just right, your dish is ready.
Turn off the heat and let it sit for a few minutes before serving. The porridge is best enjoyed warm and can be served on its own or with a side of meat or fish.
Conclusion: Preparing plantain porridge is simple, and the result is a flavorful, hearty dish that can be enjoyed by anyone. Whether you're looking for a nutritious meal or something comforting, this recipe is sure to satisfy. Give it a try, and you might just find it becoming your favorite dish too!

Explain 5 practical kitchen rules you observe in your kitchen.
Here are five practical kitchen rules i often observed to ensure safety and efficiency:
Keep Sharp Objects Properly Stored: Knives and other sharp tools should be stored in a designated area, such as a knife block or magnetic strip, to prevent accidents.
Clean as You Go: Regularly clean counters, cutting boards, and utensils while cooking to prevent cross-contamination and keep the workspace organized.
Always Use Oven Mitts(Gloves): When handling hot pots, pans, or oven trays, always use oven mitts to prevent burns.
Handle Raw Meat Separately: Use separate cutting boards and utensils for raw meat to avoid cross-contamination with other foods.
Turn Pot Handles Inward: When cooking on the stove, always turn pot handles inward to avoid accidental knocking or spilling of hot contents. These rules help maintain a safe and efficient kitchen environment.
