The Diary Game #47: Making my comfort food to comfort myself.(4th July 2024)

DEAR DIARY

Slept with so much burden in my heart and that made me worried and unhappy when I woke up.
Before the beginning of this year I had written goals and projects I planned on achieving before the year ends and this is half of the year and believe me, nothing has started yet.

Thinking on the possibilities of achieving them all before the ends even made me more unhappy.

My husband noticed I was not my usual self, so he inquired of me what the problem was.
After narrating my story and lamenting to him, he smiled and said babe, you are still alive, at first it made no sense but thinking about it again made me realize how ungrateful I had become.

I wiped my tears and decided to take one step at a time. And to believe I could still achieve all I want as long as am still alive.
To further comfort myself, I decided to make my comfort food.

I quickly dress my daughter and headed straight to the market. Oh how expensive things has become. Not withstanding I was hell Bent on making my favorite comfort food.

I so love Banga soup, because of it's unique teast. This soup is made from palm fruit extract.
Though it's a bit stressful to make, I really don't mind going through the stress of making it.

The things I bought bat the market are

  • Palm fruit.
  • Meat(but you can use any protein of your choice)
  • Salt
  • Pepper
  • Crayfish
  • Locust beans (Parkia biglobosa)
    *Dry fish
    *Scent leaf

The second thing to do is to boil until the kernel back becomes tender.
Then you proceed to merch with a mortar and a pistol.

Then extract the juice with hot water. Make sure the water is not too hot because you would use your hand to press out the juice.
The juice should come out thick and not watery.

After this process, you can start cooking. Now if you are making this for the first, you would have to per boil your palm fruit extract until it's very thick and you can see red oil floating on top.

The next step would be to cook all your protein and add them up as the final step, but because I have made this meal over and over again, i would be doing it another way.

Like they say there are many ways to kill a bird but trust me this is the quickest way to kill this bird.

While for the method I use, it complicated but faster.
I used introduce all my ingredients all at once.
Except my scent leaf and locust beans.

I added all my protein, onion, crayfish, salt, and pepper. Pls be very generous with your onion and crayfish.

Allow to boil for five to ten minutes then introduce your locust beans. Their is a trick my mum thought me with this locust beans in other to get more flavor from it, she said roasting it does the magic.

I roasted the my locust beans for one minute before blending it.
After you add your locust beans allow to fully cook.

From time to time check on it to see if your seasoning needs adjustment. Your soup should be fully cooked in 45 minutes. The last thing you add is your scent leaf and allow to boil for an extra one minute.

Your delicious meal is ready.

You can eat it with any thing, rice, bread, Eba, etc.

Me I eat my with sweet potatoes. I really did enjoy my meal. It was the perfect way to comfort myself. Eating good food gives me so much joy especially home made.

After eating I went to make my hair from the salon, I and my daughter went for midweek service in church. When we got back we just took our shower and went straight to bed.
