Hello everyone, I am please to be here to share one of my favorites soup but I didn't know how to cook this particular soup but anytime I go to the restaurant and the sale it, I must option for it.

This is one of the healthy leaves that a lot of people don't know, it has a lot of healthy benefits

Editan soup is classified among vegetable leaves, it is one of my native soup in my place that is the efik, this leave is very bitter so for one to remove the bitterness you have to wash and squeeze the water out or if you don't want to wash it out you can add bicarbonate and it will remove the bitterness.

The two methods of cooking editan soup as I had already mentioned depends on individual choices. Like myself I love my editan soup to be the way it is but I will add bicarbonate so as to help remove the bitterness but for the healthy benefits will still be the way it's supposed to be.

Gather all your proteins, wash them very , make sure that there is no sand, and your pepper, onions, seasoning cubes. Make sure your seasoning cubes and every other ingredient must be enough, this is to bring out the taste from your proteins. When you are done with the seasoning of meat, make sure that after few minutes, it is advisable to add enough water so as to allow the meat to be soft

Step two is that since you bought the editan leaves in the market it is advisable to wash it, that is after slicing the leaves. Then grand it, this method requires a cool water, after rinsing the leaves, then put it in the pot then add enough water and put it on the fire, add your bicarbonate and allow it to cook until the bitterness is no longer there then you add your proteins.

Like for the fish, there is this particular common fish that I use in cooking the soup and it gave me that sweet taste that I was looking for. The fish was so sweet.

So I added the fish immediately after adding my proteins, then I added red oil, crayfish and and my seasoning cubes, I allow it to cook for few minutes then I added my adusa leaves and then my soup was ready.

This soup is always very greenish no matter the amount of oil you add, it will not still show.

So guys you can decide to eat it with any swallow of your choice.
