Hello friends
It been long I participated in this exciting contest which is organized by @ngoenyi.
In line of this contest, I will love to share with us one of my local recipes that is been loved by everyone in my community.
The good this is that this particular dish is very easy to prepare and it only requires just a few simple ingredients which is common to get.
In my village we call this food mmakrak soup which is mackerel, though the method of preparing in other part of the country might be different from how we prepare in my village.
LETS LIST OUT THE INGREDIENTS USED IN COOKING MMAKRAK
- MMAKRAK (MACKEREL)
- RED OIL
- SAINT LEAVE
- ONIONS
- SEASONING CUBES
- PEPPER
This particular food is very delicious and proteinous, even a common man can afford it depending on the quantity.
STEP1
Before you start cooking this soup, you will have to open the tommy of the fish and remove the dirty particles and then cute the head though cutting the head is optional.
When you are done, wash it very well until you notice that there is no sand and the water should be very clean.
When you are done with that, just keep it aside.
STEP 2
At this point make sure you have grand your pepper, cut your onions, slice the saint leaves and then keep it aside.
All this ingredients should be much expercially the pepper, since it is fresh so the soup has to be hot.
Set in your fire, then put in your pot, make sure you dry it to the extent that there is no water, add your red oil and allow it to be hot, add a little pepper, onions and your seasoning cubes, then stir it for it to be hot. Then add your mmakrak ( mackerel the tiny ones) then add your ingredients again but don't add saint leaves, cover your pot and allow it to cook for some minutes.
NOTE: Once you add your mackerel, do put spoon again so that it won't scatter the fish.
When you know that it is probably cooked, you can use a wooden spoon and turn it gently and then taste it to know if the taste has come out.
In this process to parboile your mackerel before cooking it.
When you know the taste has come out, you then add your saint leaves
After adding your saint leaves you cook it for like a minute and your mmakrak soup is ready
You can decide to eat with any swallow of your choice.
Another thing is that you can decide to use it as sauce which you can use it to eat rice, yam or plantain. Any how you want to eat it, you will enjoy it.
