Hello steemians, i believe today is a special day to have an inspiration to write again on a very special topic. I am inspired to join this contest not just to participate but to also teach us how to prepare home made Nigerian moi-moi. I also want to appreciate @shiftitamanna for bringing up such contest in Steem For Ladies. Please feel free to read and comment.

WHAT IS THE NAME OF THE DISH THAT YOU HAVE MADE THIS WEEK? AND WHY DID YOU CHOOSE THIS DISH
Home made Nigerian moi-moi is one of my best and very special and known food in Nigeria. It is a traditional food, that's why I describe it as a Nigerian delicacy which means that all tribes can as well make this meal, and as such every individual should know how to prepare this meal. You can as well call moi-moi beans pudding. I think that's the tush name for it. But we Nigerians prefer the local name moi-moi. It is mostly made from a certain kind of beans we call iron beans or honey beans and some other local ingredients but you can still prepare it with any kind of white beans too.
I must admit, Nigerian homemade moi-moi is not very simple and easy to prepare like the normal porridge beans or jollof rice but with time and a little lecturing like I am doing here, you will become perfect at it and be able to prepare it anywhere, anytime, any day.

Here are the list of the ingredients I used
You are free to either increase the quantity or reduce it depending on the number of persons you want to serve. As for me I choose to serve 6 persons.
Serving: 6 persons
Duration: 1hr 30mins

  1. 4 cups of iron beans. = #1,200
  2. 2 big balls of onions =#200
  3. Crayfish =#200
  4. 4 cubes of maggi =#100
  5. Palm oil. =#400
  6. Boiled eggs. =#500
  7. Fresh pepper =#200
  8. Fresh fish =#1,000
  9. Salt. =#120

THE PROCESS OF MAKING MOI MOI
Step 1: First start with measuring your 4 cups of iron beans or honey beans. Soak he beans, leave it for about 10 to 20 minutes to soft a little. At this point, you may prefer to use your hands to rub the beans together in between your palms to remove the skin, or you can use a food processor to do that. I prefer pounding it in a mortar gently and steady. You will observe that the shaft will just separate itself from the beans,this way I wouldn't feel to stressed unlike the rubbing in between the palms. And for those that doesn't have a food processor at home, you may also go with the pounding method as it is more effective.

Step 2: The next step is to seive out the shaft from the beans. Remember that after pounding, you would remove it from the mortar and put it in a bowl or bucket or anything that will enable the seiving process. Pour a reasonable amount of clean water in the bowl you put the beans, you will discover that the shaft will by now be floating, so you just seive out the shaft.
Repeat this process untill you have seived out all the shaft from the beans.
Step 3: Pour the beans in a tray and separate the shaft from the beans(this is optional).
Step 4: Combine the beans, onions, crayfish and pepper and take it to a grinding mill. As for me, I simply used a smart blender at home and it did the job perfectly. Just in case you have a blender you can also use it.
Step 5: While blending, prepare and steam your fish to be soft and tasty. Also cook your eggs. You can use as many eggs as you want. You can also decide to just use one that is either the fish or the egg because it is still the same protein and to save cost too. I only used one which is the egg.

Step 6: Once it is blended transfer it into a bowl and add your maggi, palm oil or groundnut oil (whichever one you prefer), taste for salt and stir the entire mixture.
Step 7: At this point you can now start apportioning them into smaller plates. This is the time you can now add your boiled eggs ontop. Also note that the kind of plate you use matters alot. You can use this small plastic plate or plantain or banana wrap or an aluminum plate. If you are making use of the plastic plate, you will have to make sure that there is always water in the pot you are cooking with to prevent it from burning. If you want to use the plantain wrap make sure you put a stick or a piece of cloth under or anything to prevent it from burning too. I prefer the aluminum plate because you just need to put the moi moi in it and put it in your pot in 3 or 4 rows but make sure water doesn't dry from the pot and the water should not also cover the first plate.

Step 8: Cover tightly allow it to cook for like 30-45 minutes and adding water at interval to prevent it from burning. To confirm if it is well baked you can simply dip a dried spoon in it. If there are no particles on it then your moi moi is ready.
Step 9: Allow to cool for an hour or so. It can be enjoyed with pap, custard, rice or alone. I love this meal.

HEALTH BENEFITS OF EATING MOI MOI

  1. I am very sure that many people are not aware that moi moi has an antioxidant properties that help fights against diseases .
  2. The Nigerian brown beans used in making moi moi is very rich in protein, carbohydrate, minerals like potassium, manganese, calcium, iron, zinc, etc and dietary fibres.
  3. It aids digestion.
  4. It also contains numerous minerals and vitamins like vitamin B1, B6, E, K which helps for body building and strong bones.
  5. It improves heart health.
  6. The ingredients we use in moi moi; pepper, fish, onions, palm oil, etc are very rich and contains all classes of food. Which makes moi moi one of the best food to eat.
  7. It is also a good source of energy.
  8. It helps reduce the risk or cancer, and so many other health benefits.

It cost me #3,920 approximately #4,000 to prepare this delicacy in my country Nigeria. To steem equivalent it cost me 0.779158 steem.
