In this blog, I will share with you a very delicious and healthy recipe, ‘Broccoli and Soya Chunks Delight’ an Indian-style sabzi (vegetable) . During my childhood, my mom started making this when we didn’t eat steamed broccoli. And I swear, broccoli became one of our favourite vegetables, especially for my identical twin brothers.
WHY BROCCOLI?
Broccoli is a nutrient-rich vegetable that helps in reducing inflammation, improving blood sugar control, boosting immunity, and promoting heart health. It is also good for healthy gut bacteria and bowel health.
BENEFITS OF SOYA CHUNKS
Soya chunks are made using defatted soy flour. They are rich in protein and full of polyunsaturated fats along with Omega-3 fatty acids.
INGREDIENTS
To make this recipe, you will need:
• 2 heads of broccoli (long chopped)
• 200g soya chunks
• 3 tablespoons mustard oil
• 2 small onions (chopped)
• 1 large tomato (chopped)
• 250ml water
• Indian spices: cumin seeds, turmeric powder, coriander powder, fenugreek powder, salt, and red chili powder
PREPARATION
Hydrate the Soya Chunks
Put 200g soya chunks in a bowl and add 200ml of water (room temperature). Let it soak for at least 15 minutes.
Heat the Oil
Take a pan and add 3 tablespoons of mustard oil. Let it heat for 2 minutes.
Add Cumin Seeds and Onions
After heating, add a full teaspoon of cumin seeds. Then, add the chopped onions and let them brown.
Add Spices and Tomatoes
Add one tablespoon each of turmeric powder, coriander powder, and fenugreek powder. Then, add the chopped tomatoes, a small amount of water, one tablespoon of salt, and half a tablespoon of red chili powder. Let it boil until the oil is released.
Add Hydrated Soya Chunks
Add the hydrated soya chunks, mix them, and cover the pan with a lid for 2 minutes on low flame.
Add Broccoli
Add the long chopped broccoli pieces into the pan and mix well.
Cook
Cover the pan with a lid and put it on low flame for 20 minutes.
SERVE
Your Broccoli and Soya Chunks Delight is ready. Enjoy it with chapati or tortilla.
