Ingredients:
- 2 cups all-purpose flour
- 1/4 cup oil or ghee
- Water, as needed
- 2 cups boiled and diced potatoes
- 1/2 cup boiled peas
- 1 teaspoon cumin seeds
- 1 teaspoon minced ginger
- 1 teaspoon minced green chilies
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- Salt to taste
- Oil for frying
Instructions:
- Prepare the dough by mixing the flour, oil or ghee, and a pinch of salt. Gradually add water and knead to form a smooth dough.
- Cover it with a damp cloth and let it rest for 30 minutes.
- In a pan, heat some oil and add cumin seeds.
- Once they splutter, add minced ginger and green chilies. Sauté for a minute.
- Add turmeric, garam masala, coriander powder, and salt. Mix well.
- Add the boiled and diced potatoes and peas to the pan.
- Mix the filling thoroughly and let it cook for a few minutes. Remove from heat and let it cool.
- Divide the dough into small balls and roll them into thin oval shapes.
- Cut each oval in half to make two semi-circles.
- Take one semi-circle, wet the edges with water, and form a cone by folding it in half. Seal the edges.
- Fill the cone with the prepared potato-peas mixture and seal the top edge carefully, ensuring the filling is enclosed.
- Heat oil in a deep pan for frying. Once hot, lower the heat to medium and carefully add the samosas.
- Fry them until they turn golden brown and crisp.
- Remove the samosas and place them on paper towels to drain excess oil.
