Ingredients:

  1. 2 cups all-purpose flour
  2. 1/4 cup oil or ghee
  3. Water, as needed
  4. 2 cups boiled and diced potatoes
  5. 1/2 cup boiled peas
  6. 1 teaspoon cumin seeds
  7. 1 teaspoon minced ginger
  8. 1 teaspoon minced green chilies
  9. 1/2 teaspoon turmeric powder
  10. 1 teaspoon garam masala
  11. 1 teaspoon coriander powder
  12. Salt to taste
  13. Oil for frying

Instructions:

  1. Prepare the dough by mixing the flour, oil or ghee, and a pinch of salt. Gradually add water and knead to form a smooth dough.
  2. Cover it with a damp cloth and let it rest for 30 minutes.
  3. In a pan, heat some oil and add cumin seeds.
  4. Once they splutter, add minced ginger and green chilies. Sauté for a minute.
  5. Add turmeric, garam masala, coriander powder, and salt. Mix well.
  6. Add the boiled and diced potatoes and peas to the pan.
  7. Mix the filling thoroughly and let it cook for a few minutes. Remove from heat and let it cool.
  8. Divide the dough into small balls and roll them into thin oval shapes.
  9. Cut each oval in half to make two semi-circles.
  10. Take one semi-circle, wet the edges with water, and form a cone by folding it in half. Seal the edges.
  11. Fill the cone with the prepared potato-peas mixture and seal the top edge carefully, ensuring the filling is enclosed.
  12. Heat oil in a deep pan for frying. Once hot, lower the heat to medium and carefully add the samosas.
  13. Fry them until they turn golden brown and crisp.
  14. Remove the samosas and place them on paper towels to drain excess oil.
