How is vinegar made?

Vinegar is made by two stages fermentation of material containing sugar or starch. In the first fermentation Yeast is converts sugar to alcohol (ethanol). In the second fermentation (acidification) alcohol is converted to acetic acid by acetic acid bacteria.

Distilled vinegar

It is produced from distrilled alcohol made from barley malt or corn. It contains 5-8% by volume of acetic acid and traces of ethyl acetate.

Balsamic vinegar

It is produced by converting sugar in cooked grapes must into alcohol, oxidising to acetic acid and then ageing at least twelve years. 5 acetoxymethyl-2-furaldehyde is the cause of its long lasting sweet taste.

Wine vinegars

It is produced by fermenting wine. The main acid is still acetic acid but tartaric acid are present in small amount. Phenolic compound are also present.

Malt vinegar

It is made from the fermented molted barley. It does contain tartaric acid or malic acid but contain small quantity of lactic acid.
Chain compound, Ike 2 methylpropionic acid contribute to its favour and aroma.

Rice vinegar

It is made from rice, and varies in color from colurless to black. In certain variety fufural and pyrazamins contribute toast like flavour. Buttery acetonin are also present in some variety.

Apple cider vinegar is made from fermented apple juice. It contain malic acid. It also contains propionic alcohol which react to produce additional acid and esters during vinegar production.

5 mL, 10 mL and 15 mL of apple cider vinegar over 12 weeks led to decreases of:

Body weight

BMI

Hip-to-waist circumference

Blood glucose levels

Total cholesterol levels

Triglyceride levels

Five Handy uses for Apple Cider Vinegar

Apple cider vinegar is great for salad dressing, but it has some other pretty incredible uses.

Clean Windows

A 50:50 solution of apple cider vinegar and water mixed in a spray bottle can help clean windows and give them a natural shine. Use a lint-free cloth or the old newspaper trick to make sure your windows have a streak-free look that's free of grime and lint.

Soothe Bug Bites

Most people reach for the calamine lotion when they get bug bites. While calamine lotion may be effective, there could be a cheaper alternative that you've already got in your pantry. Apple cider vinegar, which is a natural antiseptic, can help soothe itchy bug bites in just seconds. (Don't worry the smell will go away after a few seconds too.)

Wart Remover

To get rid of an unsightly wart, soak a cotton ball in apple cider vinegar and then fasten it over the wart with a Band-Aid overnight. Repeat the treatment until the wart dries and falls off.

Help Joint Pain

Apple cider vinegar, which is a natural anti-inflammatory, may be able to reduce joint pain in some people. To use apple cider vinegar for joint pain, most recommend mixing a tablespoon or two with a glass of water and drinking it once or twice per day.
