Ingredients
-100g of flour
-50g of potato starch
-100g of sugar
-2 eggs
-60ml of seed oil
-50ml of milk
-2 teaspoons of baking powder
For the custard:
-500ml milk
-160g of sugar
-5 yolks
-60g of cornstarch
-1/2 of a lemon (the zest)
To decorate:
-qg fruit (strawberries, quiwi, raspberries)
Preparation
Combine the sugar and eggs in a bowl and work them with the whisk of an electric mixer to obtain a swollen and foamy mixture. Then add the oil and milk, continuing to work. Add the sifted flour together with the starch and baking powder in spoonfuls. Pour the mixture into a buttered, 28cm diameter tart pan. Bake in the oven at 180° for 20 minutes. Meanwhile, prepare the custard. Heat the milk with the lemon zest, then remove the zest with tongs. Combine the sugar and egg yolks and work with the whisk. Pour the mixture into a saucepan and cook the cream to thicken, stirring with a whisk. Cover the custard with plastic wrap and leave to cool. Remove the tart from the oven and place it upside down on a serving plate, so that the grooves are facing upwards. Next, fill with the custard.
Finally, cut into wedges or slices the fruit you have chosen and decorate the tart to your liking.
