Traditional Kabuli Pulao Recipe by MalihaFarhan

Assalamu Alaikum Steem's Friends. Greetings to you all. I am fine by the grace of Allah Almighty. May Allah bless us all with health and wellness Aameen. Today I am a sharing a traditional recipe of Pakistan's province Khyeber Pukhton Khuwa and Afghanistan. I oftenly made this rice dish. I would also like to tell you history of Kabuli Pulao.

Let's share the recipe.

Ingredients;

NameDetail
Rice4 Cups
Lamb Cut2 Kg
Purified Butterhalf cup
Onion slices3,4 spoon
Carrots2 large (jullienne cut)
Ginger, garlic paste2,2 each
Whole spices3 tbs
Salt3 tsp
Green chillies10 large
Raisins,Almonds1,1 cup (soaked half hour)

Direction;

In a wok add onion, ginger garlic paste and whole spices and cook for 5-7 minutes.

Add lamb cut and cook until it's color changes after that add 2 whole garlic flowers and water.

After boiling water cover the lid and pressure the cooker for 20 minutes and make a paste of green chillies with water.

When cook meat well add jullienne cut carrots and chillies paste in the meat. Mix well and add 5 cups of water and soaked rice in the meat.

Take out almonds and raisins from water and Peeled the skin of almonds. In a pan add nuts and purified butter and saute for 2 minutes.

When rice cook well pour dry fruits on it and cover and cook on low flame for 5 minutes.

Tasty Kabuli Pulao is ready you can eat with yougurt and salad.

Kabuli Palau was invented by Kabul's upper-class families who could afford to cook their rice with caramelized carrots, plump raisins, and dried nuts. This dish became increasingly popular as Afghanistan's population grew wealthier. There is also popular in many cities Pakistan as well specially KPK. of As a result, Kabuli Palau was renamed Qabili Palau. Only a professional cook can truly balance the diverse flavors of this dish, according to the Dari word Qabil, which means well achieved.Due to the price and quality of the ingredients, as well as the fact that it is Afghanistan's national dish, Qabeli palaw is regarded as a festive and important dish. The dish is usually served in the middle of the table, surrounded by other meals.
