Husbands should take care of their wives as much as possible. As a husband, I am totally taken cared of by my wife in almost every thing. Just like she always find time to cook for most of the meal every day.

Knowing how she loves soup especially dish soup, I tried to learn her favorite mung bean soup which also happens to be my favorite. In my homegrown country I usually have beans in a meal but I have not tried this one until I met her and spend some time living abroad. She made this for me and on that day I usually crave for this.

Mung bean is popular among Asians especially here in the Philippines. It is also know as a poor mans meat. because it is very rich in protein also with carbohydrates and nutrients. It is known as monggos in Visayan and monggo in Tagalog region of the country.

I am very lucky to have been introduced with a lot of Filipino cooking. I can cook some of the famous dishes in the country and one of those is the creamy mung bean soup. Here's what we need to do.

We need the following:

125 grams mung bean
yellow squash
chayote
65 grams coconut milk powder (or 3 glass fresh coconut milk)
1 small carrots
3 cloves garlic
10 grams ginger
1 medium onion
2 green chili (optional)
1 chicken broth cubes (or home made chicken broth)
salt and pepper to taste
cooking oil (used cooking oil from frying meat is a better choice)

Procedure

Wash the mung bean 2 to 3 times to remove the dirt. Put 3 glasses of water and boil until mung bean is cooked.

While waiting for the mung bean to be cooked, slice the ginger and squash in a medium size while the carrots, chayote, onions, garlic, and spring onions into tiny tidbits.

When it keeps on boiling, add the chop yellow squash. Cover and let the mung bean absorbed the water.

When the mung bean dries up but not fully cooked, add another 2 glass of water. Wait for few until mung bean is fully cooked.

When the mung bean is soft and fully cooked, mashed them together with the yellow squash.

Transfer the cooked mung bean to the bowl, wash the pan and ready for the sauté.

Then sauté first the garlic followed by onions, ginger, carrots, chayote and spring onions. Add chicken broth cube then stir f0r 30 seconds.

Add the cooked mung bean into the pan and continue stirring until its mixed well with the spices and vegetables.

Mix the coconut milk powder with 2 to 3 glasses of water. It depends how creamy you want your soup to be. Then add to the pan.

Stir, cover and boil for 1 to 2 minutes. Add salt to taste and ready to serve!

Cooking/Preparation Time : 45 to 50 minutes

Mung bean needs to be fully cooked to have a good texture when eating. Most likely it needs to be boiled twice or you can double the amount of water when boiling. This preparation is only good for 2-3 persons. When you need more for multiple people, just simply add the ingredients. For vegetable options, it doesn't need to be carrots and chayote. It depends what vegetable you want to add in your soup. Leafy vegetables are good too!

This dish is very simple and ingredients are not expensive. Aside from cooking for my wife, my day is usually running errands, go grocery shopping, send and pick-up laundry to the shop, study Thai language every Monday and Thursday (1 hour each day), do assignments in Thai language and do online work given to me from my office.

But every day, I am making sure that my wife and the baby is well taking cared of especially with their needs and most of all being by their side, answering my wife's needs.
