How are you all my steemit friends? Alhamdulillah, I am well with your prayers. Today I will share the recipe for Vegetable Khichuri. Who doesn't love to eat hot khichuri with various winter vegetables? It's one of my favorite dishes! Khichuri is one of those rare dishes that effortlessly crosses the line between being considered 'ordinary' in cooking and 'unparalleled' in taste. Eating khichuri is quite a treat during the monsoon and winter. Today, for our lunch menu, I cooked thin khichuri with these winter vegetables.
- 300 grams of normal rice
- 150 grams of maskolai dal
- 150 grams of lentil dal
- 1/2 cup cauliflower
- 1/2 cup chopped cabbage
- 1/3 cup carrot
- 1/3 cup beans
- 1 small tomato
- Coriander leaves, and green chilies as required.
- Onion and garlic are chopped as required.
- Oil and salt to taste.
First, wash the rice and dal together and soak them in water for 15-20 minutes. Then, cut and wash the vegetables. Chop the onion and garlic. Then add enough water to the rice and dal and let it boil on medium flame until half cooked. At that time, add turmeric, ginger paste, and salt.
I reduced the flame put a pan in another oven heated the oil and lightly fried the sweet pumpkin, carrot, and cauliflower with cumin seeds. I added the remaining vegetables and fried them on medium flame, added turmeric powder, and then added enough salt and fried them a little on the flame.
Now pour the fried vegetables into the khichdi mix it and add a little water according to the thickness. Then cook on medium flame until the vegetables are cooked. When everything is almost cooked, add the cabbage. Cover the pan and let its contents boil for about 15 minutes.
Finally, heat oil in another pan and fry the onion garlic cloves, and dry chilies with boiling water until they turn red and pour it into the khichdi. Then add the fried garam masala and coriander leaves to the khichdi.
Now it's time to eat. Serve hot khichdi with pickles, lemon, and ghee. This is a very delicious recipe It was very good to eat.
