শুভ সকাল ,সকল স্টিমিট বন্ধুরা। আশা করি ঈশ্বরের আশীর্বাদে সকলেই ভালো আছেন এবং সুস্থ আছেন। আজ আপনারা উপভোগ করবেন একদম ইউনিক একটি রেসিপি এবং ব্যতিক্রম স্বাদ যুক্ত একটা রেসিপি। আমুদি মাছ দিয়ে বীজ কলার তরকারি। একদম পারফেক্ট কম্বিনেশন বলতে পারেন। বীজ কলা আমাদের বাঙ্গালীরা ডয়রা কলা নামে পরিচিত।তবে বীজ কলা খেতে খুবই সুস্বাদু হওয়া স্বত্বেও কিছু মানুষ বীজ কলা খায় না তার কারণ প্রচুর বীজ থাকে বীজ ছাড়ানোর ভয়ে তারা তেমন একটা পছন্দ করে না। একবার যারা বীজ কলার স্বাদ উপভোগ করেছেন তারাই জানেন বীজ কলা কতটা মজার খেতে। আমার কাছে খুবই প্রিয় একটা রেসিপি এই বীজ কলা রেসিপি। পূর্বে আমি অন্য কমিউনিটিতে বীজ কলার বেশ কিছু রেসিপি শেয়ার করছি। যেমন চিংড়ি মাছ দিয়ে বীজ কলা, পুঁটি মাছ দিয়ে বীজ কলা। আজ আমুদি মাছ দিয়ে বীজ কলা একদম নতুন রেসিপি। আশা করি সকলের খুবই পছন্দ করবেন রেসিপিটি। চলুন রেসিপিটি শুরু করি।
উপকরণ পরিমান
বীজ কলা 4 পিচ
আলু 2 পিচ
ভাজি আমুদি মাছ 300 গ্রাম
পেঁয়াজ 3 টি
রসুন 1 টি
কাঁচা লঙ্কা 10 টি
মসলা পেস্ট 1/2 বাটি
হলুদ 1 টেবিল চামচ
লবন 1.5 টেবিল চামচ
সরিষার তেল 6 টেবিল চামচ
জল প্রয়োজনমত
প্রথমে আমি বীজ কলা গুলো সংগ্রহ করলাম। তারপর বীজ কলার খোসা বটি দিয়ে ফেলে জলের মধ্যে রেখে দিলাম কিছু সময় ।কারণ কলার কস টা কিছুটা বের হওয়ার জন্য। তারপর জলে ধুয়ে নিলাম।আমি দুটি আলু নিয়ে খোসা ফেলে কেটে নিলাম।
এবার আমি 3 টি পেঁয়াজ ও 1 টি রসুন নিলাম। পেঁয়াজ রসুনের খোসা ফেলে দিয়ে কুঁচি কুঁচি করে কেটে নিলাম।
আমি 10 টি কাঁচা লঙ্কা নিলাম ।কাঁচা লঙ্কা গুলি মাঝের থেকে কেটে নিলাম।
আমি জিরে, পাঁচ ফরণ, শুকনো লঙ্কা, আদা রসুন একত্রে সিলে বেটে পেস্ট করে নিই।
এখন আমি ভাজা আমুদি গুলি নিলাম।
আবার 3 টেবিল চামচ সরিষার তেল কড়াই এর মধ্যে দিয়ে গরম করে নিই। তারপর বীজ কলা আলু তেলের মধ্যে কিছু টা ভেজে নিই।
আমি 1/2 টেবিল চামচ হলুদ গুঁড়া এবং 1.5 টেবিল চামচ লবন বীজ কলা আলু সাথে মিশিয়ে নিবো ভালোভাবে।
কিছু সময় পর আমি প্রয়োজন মত জল দিবো। তার পর আমি বীজ কলা সেদ্ধ করবো 18 মিনিট।
এবার আমি ভাজি আমুদি মাছ কলার সাথে দিবো।
আমি মসলা পেস্ট বীজ কলার তরকারির মধ্য দিবো।
8 মিনিট ফুটিয়ে কড়াই থেকে নামিয়ে নিবো।
এবার আমি কড়াই এর মধ্যে 3 টেবিল চামচ সরিষার তেল দিবো। তারপর আমি পেঁয়াজ রসুন তেলের মধ্যে দিয়ে ভেজে নিবো
এবার আমি বীজ কলার তরকারি পুনরায় কড়াই এর মধ্যে দিয়ে ভাজা পেঁয়াজের সাথে আমি সেদ্ধ করে নিব 10 মিনিট ।এবার করাই থেকে নামিয়ে নিবো।
এভাবেই আমি সুস্বাদু বীজ কলার তরকারি টি রান্না করি সামুদ্রিক মাছ আমুদি মাছ দিয়ে।
