I hope everyone is well. Alhamdulillah I am fine.
I am going to share with you today a delicious vegetable khichuri. Now it's cold, so eating khichuri will be very nice. I am sharing with you all the ingredients that I will use to cook Khichuri one by one.
Ingredients by which khichdi will be cooked: (Masala items)

  1. Onion 2. Pepper
  2. Ginger 4. Garlic
  3. Cardamom 6. Cloves
  4. Pepper 8. Maggi masala etc.

I will use all the vegetables.

  1. Potatoes 2. Carrots
  2. Cauliflower 4. Onion ink
  3. Beans 6. Tomatoes.

◻ Today I will cook mung dal khichuri so first I will fry the dal well.

After that, I will beat ginger garlic, and onion well.

(Start cooking)

First I will add oil to the pan. After the oil is hot, add carrots. Then I will give you potatoes. Choose the vegetables that take longer to cook. Then I will add chickpeas, onion ink, and tomatoes for frying.
While frying the vegetables, they should be fried with oil along with salt and a little turmeric.
After 10 minutes of frying, the vegetables will be red and slightly cooked. After that, I will put the vegetables in a container.

Now fry onion, ginger, garlic, and chilies in oil. Saute well with a little salt for 5 minutes. Then all kinds of spices should be added to the spices.

I will first add bay leaves, cardamom, and cloves and then add all kinds of spices. Kneaded well for another 5 minutes. After that add the pre-fried dal, I tried for some time with the dowel. Then I added the pre-washed rice. Cook with rice for 5 to 6 minutes. Then I will give the fried vegetables first.

Cook well for 10 to 15 minutes with little water. By draining this water, the spices will blend nicely with the rice. Then I will add twice the amount of water that I had given for the rice and dough to boil the khichuri rice. The water will dry up within 20 to 25 minutes. When the water dries up, leave it well in the net and let it simmer for 10 minutes. This will make the vegetables soft. It will be perfect to eat.
