Today I am here to share a nice and delicious recepie with you by taking part in the cooking contest organized by @solaymann brother. Many thanks to him for organizing such a nice contest for us. I am going to share a nice "Soya chunk curry" with you today. Soya chunk is a popular protein-rich food that you easily get in any grocery shop. I have cooked the soya chunks with potato, tomato and cauliflower using some simple spices. It is easy to cook and not time consuming; but very delicious and nutritious. Maximum time for soya chunk curry is 25-30 minutes.

Soya chunk | 125 gm |
Potato | 2 medium |
Cauliflower | Desired quantity |
Tomato | 2 medium |
Oil | Total 2.5 teaspoon |
Seasoning spices | 1 teaspoon |
Green chilli | 5-6 |
Salt | 2 teaspoon |
Turmeric powder | 1.5 teaspoon |
Mixed hot spice powder | 2 teaspoon |
Water | as required |
At first soak the soya chunks in a water for around 1-2 hours. When the soya chunks absorb water and become spongy and softer wash these thoroughly in water and remove the water from the spongy soya chunks by pressing with hand. Then pour 1 teaspoon of oil in a hot pan and add the soya chunks in the hot oil to fry. Add 1/2 teaspoon of salt and 1/3 teaspoon of turmeric powder in it and mix well. Stir the soya chunks continuously in medium flame. These turn into golden color within 5-6 minutes. Then take the fried soya chunks out of the pan.
Now pour 1.5 teaspoon oil in the pan and let it to be hot. Add the seasoning spice (White cumin, black cumin, fenugreek, mustard) in the oil and the spice turns into golden color within 30 seconds. Then add the chopped vegetables in the pan and stir well. Cover the vegetables for 2 minutes when the flame is medium.
Add the salt and turmeric powder in the vegetables and mix well. Add little warer and cover the vegetables for being softer. Stir the ingredients after each 2-3 minutes by removing the lid. Continue adding little water until the vegetables are soft enough.
When the vegetables are soft enough add water in the pan. Then add the fried soya chunks in this curry and let it to boil in high flame.
When the water starts boiling well add 2 teaspoon of hot mixed spice powder( Cinnamon, cardamom, black pepper, coriander seed) in the curry. Let the curry boil for 3 minutes in medium heat. Then turn off the stove and add the chopped coriander leaves at last.
The delicious soya chunk curry preparation is finished here. Hope you can try this at home by following the above steps.
I also cooked eggplant and tomato chutney on that day. I ate the soya curry anf chutney with rice on that day. The curry was amazing to taste. The soya chunks were so soft and juicy. The flavor of tomato, cauliflower and coriander gave the curry a beautiful winter tinge. Hope you all like this recepie so much.
