I am sure that the word 'Moju' must be a new word for all of you. Brinjol Moju means a delicious Sri Lankan way of cooking Brinjol in sweet flavour and that curry can be found on the food tables of every special occasions like weddings and parties in Sri Lanka. If you taste it you will definitely love it. So, let me tell you how we make it step by step.
Ingredients.
*3 middle size Brinjols.
*2 middle size Onions.
*1/2 cup of coconut milk.
*Spices - 3 tea spoons of chili pieces, 2 table spoons of sugar, 1/4 table spoon of turmeric powder, 1/2 table spoon of salt
*Gamboge
*3 Shallots.
*Pandan leaf.
*Curry leaves.
*2 Garlic cloves.
*2 Chilis
1.Cut brinjols and onions into little pieces and fry them in coconut oil untill they become brown.
- Now mix all the spices and other ingredients with the coconut milk and keep the pot on the lip.
- Add fried brinjol and onion pieces to the pot, when that mixture becomes heated enough.
- Now you can enjoy the swett Brinjol Moju with rice.π
