Since last evening I already decided what I was going to cook for lunch today...
It's been long since I last cooked Chicken Tandoori Rice, I learned about this dish when I came here in Mauritius and I really like its taste!
So yesterday evening, I marinated the chicken that I was going to use to make the dish. The earlier you marinate the chicken, the better the taste will be...
Have you ever tasted Chicken Tandoori Rice my friends!?
To marinate the chicken, I used : Salt, pepper, garlic, onions, tandoori mix spices, cumin, yogurt, coriander and mint!
Then today I lightly fried the chicken pieces and potatoes - Half cooked!
In a rice cooker, I replaced the chicken and potatoes with more marinade and mixed together...
I added a good quantity of fried onions in!
While my rice was precooking in another pot of aromatized water, I prepared the below which will go on top of my dish!
Pistils saffron water / Mixed Vegetables / Fried Peppers
Then I covered the chicken and potatoes with half boiled rice, then topped up with the mixed vegetables!
Next, I added quite a good quantity of fried onions...
Lastly the fried peppers and saffron water and we are good to put on the rice cooker.
I let cook for around 30 minutes and let rest for 15 minutes!
Everyone who ate it was very satisfied...
Served with some tomato salad and chili...perfect lunch!!!

On the other hand...I had to visit the dentist after lunch...I just didn't have time to prepare something for tea time...
As such we had some biscuits, cookies and cheese with our tea!
