Yesterday when I saw those nice sweet potatoes that my husband brought home and the beef I had in the fridge...I already knew what I was going to cook for lunch today!!!
It's been quite some time that I did not cook a nice beef tajine at home...
Let me show you how I did my BEEF TAJINE WITH SWEET POTATOES AND PLUMS!
After washing the meat, I placed all the pieces in my tajine and seasoned with turmeric powder, salt, ginger/garlic powder, paprika, coriander, olive oil and freshly grated garlic...
Then I started the cooking - You will see that I did not put the veggies now as the beef will take much longer to cook than the vegetables!
I put them later on...
Next I added finely chopped red onions and fresh tomatoes - Mix them all well and let cook for couple of minutes!
When there was approximately 15 minutes left for the beef to be well done, then I started to place my vegetables.
In my tajine today I put : Sweet Potatoes / Gourd / Carrots / Green Peas / Chayote / Plums and green chili!
I seasoned the veggies with little salt and saffron water...then covered and cook until the vegetables meat were tender and most water evaporated!

And here we are dear friends...my delicious beef tajine is ready...
We all had a lovely lunch earlier today and we enjoyed this tajine with some home made Batbout bread which is a classic bread from Morocco!
Otherwise for tea time I did not cook anything special today...we simply had our tea with some biscuits and bread with butter/jam.
I am still feeling pain in my gums after the tooth extraction...may the pain will last 1 or 2 more days! Let's see!
