Bengali meal can’t finish without a serving of sweet yoghurt (mishti doi) – homemade sweet yoghurt with caramelized jaggery. This is very famous in West Bengal.
This sweet curd is serving in any occasions. There are 2-3 ways to prepare it. Among them this is the traditional way. There are another way called "bhapa doi". Though this traditional way to prepare “Misthi doi" takes time but it worth’s the waiting.
Ingredients
- 1 liter full cream milk
- 300 gm palm jaggery
- 2 tsp fresh plain curd
Method
- Heat the milk in a heavy based pan and reduce it to 1/4th it's quantity.
- Heat the jaggery in a heavy saucepan and melt it down using 10 ml of water.
- Add the jaggery to the boiling milk and stir well.
- Cook for another 5 minutes and cool down.
- Stir in the curd. Do make sure that the milk is not too hot when the curd is added. Pour in the mixture into a terracotta or clay pot and keep in a warm place to set. Serve chilled.
