Vegan Lentil Seed Burgers

Hello everyone! Is it just me or does anyone else hope they wake up one morning and realize the world situation was just a bad dream and you breathe that huge sigh of relieve, with even a little giggle as you tell someone about it. I'll have to go on with my life hoping this day will come. Eating fun food kind of puts the bandage on my broken heart for a while. So I have decided to eat a vegan burger to ease the pain.

On the rare occasion that I indulge in vegan burgers and dogs, they are usually store bought. There are many tasty brands. Also there is the beyond meat and other products like that. I do consume those products from time to time but feel a little mixed about it.

Today I really felt like a burger to add a little excitement to a dreary day, so I made my own using ingredients I had laying around the kitchen.

  • The main ingredients were lentils and sunflower seeds which I ground into a mealy texture in my little blender.

  • Don't forget to grind the lentils in raw form with sunflower seeds
    Add with the above
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1 teaspoon cayenne
  • juice of 1 lemon
  • 1 tablespoon maple syrup
  • 1/2 teaspoon liquid smoke (optional)

Mix ingredients together and form balls. Press into patties. Let sit for a while to absorb the liquid from the beet and carrot. If the mixture is too dry, add a little water gradually until a ball is easily formed. Beets and carrots could have different amounts of liquid in them.

Make sure the pan is nice and hot at first. I used a small amount of oil but if you have a very good not stick pan you could probably get away without oil. When the burgers are brown on both sides, add a few drops of water at a time, being careful not to get them too moist. Turn down the heat and cover allowing the lentil flour to absorb the liquid and cook. After ten minutes or so you should have a pretty firm burger.
They hold together surprisingly well but they still need to be treated with care since they have no gluten in them.

I gathered quite few toppings that I had a hard time fitting in the burger but it was very fun to eat.

I reserved my gluten intake for the white bread which is my guilty pleasure for the Easter weekend. That's my excuse for now.
