This broccoli salad is great as a side dish in warm weather, but also is a great alternative when you want to enjoy fruits and vegetables in a new way.
Things You'll Need:
2 large bunches of fresh broccoli
1 cup red onions, diced 2 cups celery, diced
1 cup of salted sunflower seeds
1 cup raisins
1 1/2 cup of red seedless grapes, cut into halves
1/2 cup mayonnaise
1/2 cup granulated sugar
4 tablespoons white vinegar
Step 1
Cut the broccoli florets away from the stems. Discard the stems and wash the florets thoroughly. Place the florets in a mixing bowl.
Step 2
Combine the broccoli florets with the onions and celery and toss lightly. Chill the mixture overnight.
Step 3
Prepare the dressing for the salad by blending the mayonnaise, vinegar, and sugar until the mixture is smooth. Chill the dressing for an hour.
Step 4
Just before serving, add the raisins, grapes, and sunflower seeds to the broccoli, onions, and celery. Toss thoroughly.
Step 5
Top with the dressings. Using the salad tongs, toss the salad until all the ingredients are lightly coated with the dressing.
Tips & Warnings
If you can't get fresh grapes, try using canned mandarin oranges instead. Make sure to drain the oranges before adding them to the mix.
If you don't care for sesame seeds, you can easily substitute with something like chopped walnuts.
While you can completely prepare the salad in advance, keep in mind that the broccoli, onions, and celery will lose some of their crunchiness if the dressing is added an hour or more before serving.
