Simple Smashed Cauliflower

This is one of my favorite vegetable side dishes. If you're a mashed potatoes fan then you'll enjoy this smashed cauliflower recipe. The base of this smashed cauliflower recipe is perfect for picky eaters.

Ingredients
Serves 6

  • 1 bunch cauliflower, chopped
  • About 1 cup vegetable broth or stock, or more if needed
  • 1 large white onion, diced
  • 1 block semi-firm tofu, diced
  • 1-2 tablespoons garlic, minced
  • 4 tablespoons butter or butter substitute
  • 1/4 cup non-fat plain Greek yogurt
  • 2 green onions, chopped
  • 1-2 teaspoons dried rosemary
  • 1-2 teaspoons dried thyme
  • 1-2 teaspoons dried basil

Directions for Simple Smashed Cauliflower

  1. In a large pot, bring your vegetable broth to a boil. Turn the heat down to a simmer and add your cauliflower. Make sure the cauliflower is barely covered by the broth, and add more broth if need be. Add the diced onion.
  2. Once the cauliflower has begun to soften, add the tofu, garlic and green onions.
  3. Once the broth is mostly boiled away, add the butter, yogurt and herbs. With a potato masher or a large fork, mash up everything and combine thoroughly. Serve and enjoy!

Usually, it seems like the only thing I've been making with cauliflower was my vegetable curry recipe. While it's a great recipe, I wanted something a little different. I decided to reach back into my arsenal and make a smashed cauliflower recipe. I made this recipe many months back, and decided now was the perfect time to bring smashed cauliflower out of semi-retirement.This truly is one of my favorite vegetable side dishes in that it's super easy to make, and easily enjoyed by anyone regardless of personal taste. The base of this smashed cauliflower recipe is perfect for picky eaters, and you can almost anything on top of it and it would still taste great.Notes: In the past, I've added cheese to this smashed cauliflower recipe with wonderful results. Sadly, I had none around when making this, but it still tastes great even without cheese. Also, while this smashed cauliflower recipe does make a great low carb substitution for mashed potatoes, don't expect this vegetable side dish recipe to exactly replicate mashed potatoes. The taste and, more importantly, the texture is way different here. I found that the smashed cauliflower took on an almost rice-like consistency, which is not a bad thing at all. It just wasn't smooth and creamy like many a mashed potatoes recipe.
