HICKORY HOT-SMOKED CARP FILLETS

Mama-Pepper told me she loved the taste of this about 50X!

If you caught our recent post about Pinkie-Pepper trying out some bowfishing with me, then you already know that she didn't really see any fish, and the only one we were able to take a shot at I shot. If you missed that post, here's some photographic evidence of our limited success.

Since one carp isn't really enough to fire up the pressure canner for, I opted for hot-smoking it over some hickory, which turned out to be a great idea. We ate part of one fillet as a side entree with our dinner the other night and blessed some neighbors with the other portion, and then the other fillet joined us for dinner last night in the form of some fish tacos. Having the hot-smoked meat over baked for the tacos sure made a big difference too! Anyone interested in a how to video? Here's some photos of that tasty meat getting cooked. Enjoy!
