Greetings and welcome to my blog. Am glad to be a part of this weeks food diary game as a first time partaker. Am so excited to share my food diary of 04/02/25 with us.
I woke up feeling very bullish on having something delicious and yet economical. I shd prepared a delicious fish stew the previous day and I had some portions of it stored in the deep freezer hence I decided to treat myself to another delicacy of fish stew and white rice.
I went ahead and warmed the fish stew afresh and dishes it on a plate. I also had to prepare a fresh white rice. I had some rice at home hence I boiled some white rice and garnished it with some left over carrots that I had at home.
As you can see my rice is looking very yummy with the dashes of carrot slices. I knew that this combination would go well with some fried plantain. Fried ripe plantains just have a way of increasing my appetite whenever Inthjnknof eating it with rice.
Went ahead and fried the ripe plantains Inajd at home and allowed it to brown. I don’t like it when it’s too yellowish. Soonest my plantain was ready and one more thing. I had been craving fried beef. What hem can a delicious fried meat so when combined with all of these.
I didn’t hesitate to get some beef. I had to wash and cook them for sometime after spicing it up with seasonings. After cooking them, I fried the beef pieces with it was dried and brought. Yummy. It was such a delicious treat and a super breakfast as I settled own to eat my white rice and fish stew accompanied by my fried beef and plantain. What a good way to start the day.
I had some duties to attend to through the day. When it was lunch time, I wanted to go for something a bit heavy so that I wouldn’t have to eat much at night.
I had the last part of a beautiful soup I cooked with Oha leaves remaining in the freezer too. So I decided to microwave the soup and use it as my lunch but It has to go with something to swallow it.
Processes Cassava flour is a very nutritious and healthy food over here in Nigeria and it’s populally known as Garri. I made the Garri with hot water and turned it until it achieved a thick consistency and my swallow was ready. A. Beautiful combo to go with the soup.
I had those for lunch and after, I continued with my activities for the later part of the day. Both my lunch and breakfast was heavy and Indisnt want to eat again for the day.
I had worked I to the night and before I retired to sleep, I noticed my stomach was growling out of hunger. I didn’t want to eat heavy so remembered I had small jollof rice I had left over in a place plastic plate.
I ate the jollof rice. It was already cold and I was too tired to make it warm. I just ate it like that to satisfy the stomach and I retired for the day.
Generally by food diary was satisfying and I ate what I wanted. Healthy and good food is good for the body for maximum body upkeep and maintenance.
