Today is a special day with my special meal, and I’ll be much happier to share my secret recipe with you guys; ekpang is a good food made from water yam, and it’s eaten more by the Efik tribes, but I’m not from Efik, but I love it more than them. This will be simple and straightforward, let's delve into it asap.
Below is the steps on how to cook ekpang:
As I said before ekpang is made from water yam which is rich in carbohydrates, there may be ways to prepare ekpang, but I prefer my own way, when you peel off your yam and wash it the next thing you have to do is to blend the yam with greater to get smooth when blending the yam you put some water into the kettle and allow it to boil.
Put palm oil into the pot and also put your periwinkle together with the oil. After that, you wash your vegetable green leaves, cut them up, and use them to wrap the blended yam. Here is a picture of myself doing it.
When you’re done wrapping it all into the pot you can now put it on the stove and remember that you boiled water this is the right time for you to pour the water into the pot and allow it to boil, make sure all your ingredients are ready such as; pepper you ground it together with onions and crayfish, Maggi and salt, smoked fish.
If the expang has started boiling, you put all the ingredients that I had already mentioned; after putting them, you mix them together and let them boil till they’re done cooking. And, boom as you can see, my delicious ekpang is ready to be eaten by myself.
