Warm greetings my beloved steemians of this community and across the globe, I hope your day went well, as for mine, it waa excellent. I'm excited to participate in this food contest diary that's organized by our dear admin @jyoti-thelight, kudos to your hand work.

In my article today, I will be gladly showing you how I prepared melon soup from the beginning to the end using a frying method, please do well to sit tight and read to the very end because you will enjoy the process, thanks.

First of all I will start by mentioning all the ingredients that I used in preparing the meal.

  • Goat meat
  • Melon
  • Pumpkin leaf
  • Periwinkle (shell)
  • Crayfish
  • Pepper
  • Curry leaf
  • Stockfish
  • Seasoning cube
  • Salt for taste
  • Red oil
  • Onions
Preparation proper

I started by washing the meats and Stockfish into a pot, add seasoning with salt and other cooking agent. I added enough water to cover the meats and cook until the meats are soft and tender.

The second thing I did was to fry the melon in a separate pot. I heat red oil on the cooker when it was hot I added the chopped onions and stir it till it brown then I added the ground egusi and stir frequently. Fry the egusi until it becomes fragrant and starts to clump together.

After it was well fried, I poured the fried melon into the pot of meat on fire, then covered it and allow it to cook for about 5minutes.

After 5 minutes I added my washed periwinkle, stir it well and allowed to boil for 2 -3 minutes.

After 3 minutes I added the pounded crayfish and the sliced pumpkin leaves into the pot, stir it very well and allowed it to simmer for about 3minutes.

Curry leaves was the last item that I put in the pot, after putting the leaves I stir it well and covered the pot and allowed it to simmer for just 2minutes before I turn off the cooker.

Melon soup is one of my best soup and one thing I like mostly in melon soup is that you can prepare it with different kind of leaves, like;

  • Bitterleaf
  • Ozuza leaf
  • Curry leaf
  • Vegetable leaf (pumpkin)
  • Waterleaf, etc.

Melon soup is commonly enjoyed by Nigerians and Ghanaian. It is made using melon seeds (egusi) as the base ingredient.
